I love December! I love all the beautiful holiday spirit, the hustle, and bustle, all the gatherings and get-togethers. It truly is one of my favourite times of the year. And when we are running between commitments or need to feed a group something healthy and delicious, these Turkey Quesadillas are my go-to.

I have partnered with Canadian Turkey to create these melty, creamy Turkey Quesadillas. I chose to use Turkey Breast fillets for this recipe but you could absolutely use thighs. This meal is a complete one-pan meal as well. After sautéing the onion and turkey, I can just wipe out the pan with a quick swipe of a paper towel and use it to finish the Quesadilla. No sink full of dishes!

So you can make a batch of these Quesadillas and you have solutions for so many things. First, they freeze fantastically so if you need to pull out a quick lunch or dinner idea, you are all set. They make a great pot luck addition when fanned out on a plate and you add a few small bowls of dips like guacamole, salsa or sour cream. And finally you can customize them to suit your favourite flavours – I love adding corn, black beans or green onion.

Weeknight Turkey Quesadillas

INGREDIENTS

Ingredients:

1 tablespoon oil (any mild cooking oil)

454 grams turkey breast (or thigh)

1 cup chopped white onion

1 tablespoon chopped garlic

1 teaspoon cumin

1 teaspoon smoke paprika

1 teaspoon salt

1 teaspoon dried oregano

1 ½ cup shredded mozzarella cheese

4 -12 inch flour tortillas

Optional Add Ins:

½ cup corn

½ cup black beans

Optional Dipping Sauce:

Guacamole

Salsa

Sour Cream

 

INSTRUCTIONS 

Directions:

1.1. Heat a large non stick skillet over medium-high heat. Add the oil, turkey, onion and garlic. Sprinkle spices over everything. Sauté the turkey until cook thoroughly.

2. Remove turkey mixture from pan, wipe clean and place one tortilla in pan. Add about 1/3 cup of the cooked turkey mixture to one half of the tortilla. Sprinkle with about a ¼ to 1/3 cup of the cheese. Sprinkle with additional add ins at this time (i.e. corn or black beans). Fold over the tortilla to make a half circle.

3. Cook for about 3-5 minutes on one side or until cheese is melted and tortilla starts to brown. Flip and finish on the other side for about 1-2 minutes. Repeat this process with all the tortillas.

4. Let the quesadillas cool for a couple minutes before slicing into triangles and serving with fun accompaniments like guacamole, salsa or sour cream.

TIPS:

You can try this with corn tortillas as well. Instead of folding one large one, you can place the corn tortilla flat in the pan, add your turkey fillings and then place another tortilla on top.

This recipe also works great for a wrap style burrito. Add the fillings to a room temperature flour tortilla, add some fresh crunch like shredded lettuce or carrots and roll and fold traditional burrito style.
